Chocolate Cookies with Coconut Filling
These chocolate cookies by themselves are so soft, chewy, and chocolaty, then comes the delicious surprise, the coconut filling, which is very goey, and the whole combination is really delectable! It’s an easy to make recipe. The chocolate outside doesn’t only look nice but it makes the cookies more flavorful and chewy and keeps the cookies soft and delicious for the longest time.

You can save them at room temperature in an airtight cookie jar or in the fridge if it’s too hot for the chocolate! But they taste best at room temperature! I hope you enjoy this recipe!
Chocolate Cookies with Coconut Filling
Super soft and chewy chocolate cookies filled with sticky coconut filling.

Ingredients
- 200 gr All purpose Flour
- 35 gr Unsweetened Coocoa Powder
- 100 gr Icing Sugar
- 1 tsp Salt
- 1,5 tsp Baking Powder
- 100 gr Butter
- 1 Egg
- 15 ml Milk
Coconut Filling
- 100 gr Shredded Coconut
- 90 gr Sweet Condensed Milk
Garnish
- 100 gr Milk Chocolate
- Some Shredded Coconut
Instructions
Prepare The Cookie Dough
- Combine all the dry ingredients together: allpurpose flour, cocoa powder, salt, baking powder and the icing sugar.
- Add the wet ingredients to the dry ingrendients: egg, milk and soft butter.
- Combine the ingredients until a dough ball forms, cover it with plastic wrap and place it in the fridge for an hour.
Coconut Filling
- Add the condensend milk to the schredded coocnut and combine.
- Portion the filling into 12 balls and set them on the side.
Assembly
- When you take the dough out of teh fridge, devide it into 12 equivalent portions. You can use the scale or simply devide the dough into two halves, each half into 3 equal parts, and finally devide each part into two and you will end up with 12 equivalent parts.
- At this point you have 12 parts cookie dough and 12 parts coconut filling.
- Flatten each cookie dough part in the palm of your hand, place the filling and close it by bringing all the sides together.
- Place the cookies on the baking sheet covered with parchement paper.
- Bake in an oven preheated to 180°C for 10 min
- Place the cookies on a cooling rack.
Decorating the cookies
- Melt some milk chocolate in a microwave or a double boiler
- Dip the upper part of the cookies into the chocolate and allow the chocolate to set
- Drizzle the rest of the chocolate and sprinkle with some shredded coconut
