Instructions
Pell the mago and cube the flesh.
Keep some fresh mango cubes for garnish.
Puree the mango with half the quantity of the icing sugar (1 tbsp)
Beat the heavy cream with the remaining 1 tbsp of the icing sugar until it's creamy and forms stiff peaks.
Add two tablespoons of the mango puree to the serving cups.
Fold the remaining mango puree into the whipped cream.
Pour the mango mousse on the puree and garnish with the fresh cubes you have saved.
Serve and enjoy cold.
Notes
If you have trouble making a creamy and fluffy whipped cream, try adding some
whipped cream stabilizer.
